[Stiftsarchiv Geras, Urkunden 1303 VII 12](http://www.mom-ca.uni-koeln.de/mom/atom/GET/metadata.charter.public/AT-StiAGe/Urkunden/1303_VII_12.cei.xml) gives you an example with extensive markup (although it does not include the full range of possible markup). The only mandatory elements are cei:idno and cei:issued/cei:date@value (default: 99999999 representing an unkown date) for each charter.
